Many of my friends are shocked that anything home-brewed can actually taste delicious.
This is understandable – my first attempts at brewing beer were disastrous and my early wines tasted like cough medicine.
But, as I discovered, the world of home-made alcohol need not be populated with mediocre drinks; if you’ve waited 12 months for a fruit or vegetable to grow, you want to be darn sure the drink you make with it tastes good!

Shake the elderflowers to remove any insects. Place the sugar in a sterilised fermentation bin or bucket. Boil up half of the water and pour it over the sugar, stirring continuously until it has completely dissolved.
